Kangaroo sausage, balsamic onion & rocket roll

Ingredients
Olive oil cooking spray*
4 extra lean Kanga Bangas (kangaroo sausages)*
1 tbs classic mayonnaise*
4 small bread rolls, halved lengthways
30g rocket
Balsamic onion jam
4 red onions, peeled, thinly sliced
2 tbs olive oil *
1 tbs brown sugar
1 tbs balsamic vinegar

Instructions
1. To make the balsamic onion jam, place the onions onto a microwave-safe plate. Cover with two sheets damp paper towel. Microwave on High power for 3-5 minutes until onions have softened.
2. Heat oil in a small non-stick frying pan over medium-low heat, add onions and cook stirring occasionally, for 10 minutes until they start to colour. Add the sugar and cook 5 minutes to caramelise slightly. Add vinegar and cook for a further 5-8 minutes or until thick. Set aside to cool.
3. Meanwhile, spray sausages lightly with oil and cook over medium heat in a non-stick frying pan or barbecue plate, turning often until cooked through.
4. Spread roll bases with 1 tsp mayonnaise. Top with rocket, 1 sausage and 1 tbs balsamic onion jam, season with freshly ground black pepper. Secure the bread top and serve.
