Herbed Roo Meatballs

Great as an appetiser


Ingredients

  • 500g Kangaroo Mince
  • 1 clove of garlic, minced
  • ½ teaspoon Pepper
  • 1 tsp lemon juice
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 2 Eggs, beaten
  • 2 cups Breadcrumbs
  • 1 tbs olive oil

Method

In a large bowl, combine mince with all of the ingredients and mix well. Roll mixture in to small balls and place meatballs on greased tray and bake in moderate oven for 15-20 minutes. Shake tray occasionally. Serve with salt reduced tomatoe sauce or a sweet chilli sauce.

Makes approx 30, depending on size
